Sauvignon Blanc is a white grape grown in many different climates all over the world.
It's greatest expression is in France's Loire Valley, especially Sancerre and Pouilly-Fume. In this cooler climate, you will find notes of citrus and herbs, with relatively high acidity. Similarly styled, with generally with more pronounced herbal notes, are the extremely popular Sauvignon Blancs of New Zealand.
As the growing temperatures rise, more melon flavors begin to creep in, and acidities become lower, the wine smoother. California and Chile exhibit this fruitier, less tart style.
Sauvignon Blanc works well with seafood and white meat, such as chicken and pork (with citrusy preparations.) A classic pairing with Sancerre is Chevrè, the soft, sharp, goat cheese of the same region.
