Ingredients:
- 1 ½ Pounds fresh ocean scallops
- ½ cup extra virgin olive oil
- Salt and pepper to taste
- 2 bell peppers any color except green
- ½ red onion
- Rice wine vinegar
- Chives for garnish
Directions: - Remove tough membranes from the scallops and pat dry.
- Combine with enough olive oil to coat well in a bowl and toss lightly.
- Season with salt and pepper.
- For the relish, discard the stem, seeds, and membranes of the bell peppers.
- Cut the peppers and onions into 1/8 inch dice.
- Sprinkle with the vinegar.
- Season with salt and pepper.
- Preheat a gas grill.
- Grill the scallops for about 3 minutes or until the edges begin to turn opaque.
- Spoon the scallops onto warm plates.
- Top with the pepper relish and garnish with chives.
