Azienda Agricola COS was founded in 1980 by Giambattista Cilia, Giusto Occhipinti and Cirino Strano. Three friends who wanted to go over what had once been the work of their ancestors. The acronym of their surnames (Cilia-Occhipinti-Strano) gives rise to the name of the company, still a partnership. Giusto Occhipinti sums up the estate’s history and philosophy thusly: “At COS, we are not interested in representing our land by cabernet or merlot, but by grapes that, for centuries, have represented our territory. Producers should not necessarily follow what the market is asking for, as the market tends to homogenize. Wine is life and for this reason, diversity.”
