I have been a vegetarian for a very long time. Here is one of my favorite winter dishes; and it's a riff on a classic.
Ingredients:
- 1 cup of brown rice
- 1 cup of water
- 1 cup of stock (vegetable)
- 1 tablespoon of butter
- 4-5 heads of broccoli
- a drizzle of Olive oil
- Salt and pepper to taste
- 1 medium yellow onion
- 2 cloves of garlic
- 7-10 cremini Mushrooms
- 1 tablespoon of butter
- 1-1.5 tablespoons of Olive oil
- 3/4 cup of raw whole cashew nuts
- A drizzle of olive oil
- Salt and pepper to taste
- 3/4 cup of good cheese shredded- Last night I used Cooperstown Cheese Company's Jersey Girl, a raw cows milk Colby made here in NY.
Directions:
The Rice
- Melt one Tablespoon of butter in a Pot

- Add one cup of rice, wait about 30 seconds and shake the pot to cover all the rice with a little butter
- Add a cup of stock and a cup of water
- Bring to a boil
- Reduce heat to a simmer
- Cover, and cook on low heat (still simmering) for 40-45 minutes, until done.
The Cashews
- Spread them in a small baking dish
- Add olive oil, salt and pepper, mix with your hands so all are covered evenly with oil, salt and pepper
- Bake until just brown; Be very careful- this burns quite easily!
The Broccoli
- Wash and cut the broccoli into approximately 1 inch floret pieces.
- Spread them on a roasting pan and coat with olive oil (I drizzle, then stir with my hands)
- Add salt and pepper to taste
- Roast (really, bake, my oven is not to fancy) at 350 for 35 minutes or so, until the edges of the broccoli start to brown
The Onions, Garlic and Mushrooms
- Melt 1 tablespoon of butter, and some olive oil in a frying pan
- Dice the onion, and add it to the frying pan
- Skin the Garlic, and crush it under a chef's knife, then dice it as small as you can,
- add that to the frying pan.
- Wash and slice (or Dice, as you like) the Mushrooms, and add them to the pan.
- Cook until the mushrooms release some liquid
The Assembly
- Using oven proof pasta bowls, lay a bed of rice on each plate
- Shred some, not to much, cheese on top of the rice
- Layer the onion, garlic and mushroom on top of that
- Add a large heap of broccoli
- Shred a lot of cheese on top of that
- Add some of the Cashews to each plate
- Toss each plate into the oven at 350 for 5-10 minutes, until the cheese on top of the broccoli is melted.
This is a satisfying, earthy dish that is perfect for winter, makes a large plate of food for 2 people, or a nice side for 4.
