The Cakebread Napa Valley Cabernet Sauvignon is a blend of grapes from throughout the valley's finest Cabernet Sauvignon appellations, ranging from Calistoga in the north to the Carneros district in the south. Sourcing fruit from multiple, diverse microclimates allows them to craft a sumptuous, elegant Cabernet Sauvignon melding the opulent black fruit character and firm tannins typical of the valley's warmer northern microclimates with the bright fruit and crisp acidity characteristic of its cooler southern districts. In 2007, 95% of the fruit came from their up-valley vineyards with 5% from the Carneros district.

Tasting notes
The Cakebread 2007 Cabernet Sauvignon grabs the taster’s attention immediately with enticingly fresh, fruit-forward aromas of black currant, blackberry and boysenberry, joined by seductive chocolate and roast coffee scents. Beautifully structured on the palate, it boasts intense, concentrated, dark berry and cassis flavors balanced by supple, theyll-knit tannins and a long, flavorful finish with fine acidity and savory mocha tones. Delightful to drink now, this rich, elegant Napa Valley Cabernet Sauvignon will blossom fully with another 5 to 7 years of bottle age.

With time in the glass the wine opens up nicely. Dark plums, tobacco, grilled herbs and licorice take shape nicely in this attractive, mid-weight offering. This is a beautiful, sleek Cabernet Sauvignon. In 2008 the blend is 82% Cabernet Sauvignon, 7% Merlot, 6% Cabernet Franc, 4% Petit Verdot and 1% Malbec. Anticipated maturity: 2012-2016."

Wine maker notes
The grapes are hand harvested, destemmed and immediately crushed, and each vineyard lot is fermented separately with selected yeasts in temperature-controlled stainless steel tanks over a period of six to seven days. Each lot of grapes is frequently tasted during fermentation to determine when the extraction is at optimum. At that point, the wine is pressed off the skins in membrane wine presses, keeping the press wine separate from the free-run wine. In this way, Cakebread Cellars' red wines, especially the Cabernets, have their natural fruitiness preserved, while the extraction of harsh, drying tannins is avoided. It is then pressed and returned to stainless steel for complete malolactic fermentation. Following this, the wine is racked into French oak barrels, of which roughly half are new and half of one and two years' use for approximately six months.

Throughout the initial aging process, the various individual lots are continually taste-analyzed to determine the final blend. Depending on the vintage, the finished blend will include up to twenty five percent combined Merlot and Cabernet Franc, with Merlot contributing the greater percentage. Once the final blend is assembled, it is returned to the same French oak barrels to age for an additional 12 to 18 months before being bottled. The only treatments preceding bottling are an egg-white fining and a single passage through a rough filter.
