Knob Creek Bourbon, bottled at an honest 100 proof likeall good bourbons were a century ago, is aged nine years in charred American white oak which lends this bourbon its maple sugar aroma, distinctive sweetness and rich, full-bodied flavor, giving it the distinction of being aged the longest of the Small Batch Bourbons. This extra aging allows it to absorb more of the sugar in the wood, giving it a slightly sweeter taste and nose.

Dry sophisticated and muscular, with a density and power controlled by a toffee, cocoa and maple syrup sweetness; baking spice, eucalyptus and resiny, with a drying and peppery finish.

Smells of sweet corn, buttered popcorn and pistachio nuts in the early stages; later whiffs pick up well-endowed scents of sautéed butter, oaky vanilla, beeswax and linseed oil. Palate entry is full-bodied, sweet and honeyed; at midpalate the taste profile turns drier, more intensely grainy-mashy and breakfast cereal-like.
