Made entirely from Romorantin, a rare and ancient variety now only planted in the tiny appellation of Cour-Cheverny. Romorantin is naturally high in acidity and often reflects the minerally soils in which it is grown. Cazin’s Cour-Cheverny shows delicate floral aromas, tinged with hints of hazelnuts and apricots. The wine is Chablis-like in quality with a long finish. The 2009 Cour Cheverny has 6.5g of acidity and no residual sugar.
