Very dark blackish-purple with glints of garnet. Black fruit and aromatic oak aromas of dark chocolate and oaky vanilla. Big, mouth-filling fruit flavors, structured and appropriately acidic; substantial tannins and hefty 14.1% alcohol. Distinctly a New World style, a whack of oak, and yet the flavors come together in a pleasant way. Stone Tree, Seven Hills Vineyard, Dionysus, Candy Mountain, Pepper Bridge, and Loess. Gently crushed into one-ton
stainless steel fermentors. The must was inoculated with yeast and punched down by hand during fermentation and then
gravity fed into the press. After gentle pressing the wine was racked to tank and allowed to settle. Aged 18 months in oak (30%
new) with four rackings. |
