Review
A stylishly crisp dry but fruity wine that is so much better value than Sancerre, a few miles further east! This wine is not at all acidic, but is full of fruit - a fine testament to Sauvignon, and may be enjoyed with or without food.

Wine maker notes
Full of enthusiasm, we work in respect of the environment complying to the TERRA VITIS and Sustainable Farming charters. Regular monitoring of the soils and vines enables us to harvest grapes at optimum ripeness and to bring out to the full the typical characteristics of the grape plant. Carefully controlled yield and attentive work during wine-making justify the constant search for maximum quality, using all the benefits offered by modern technology. Isabelle and Noë represent the 5th generation, since 1885, in succession, to carry on the family business and transmit the passion for wine. Octavie was the first name of Isabelle ‘s great grand-mother. Octavie was 99 years old when she died.

Technical notes
2010 September : good weather conditions for the harvest and good quality of the grapes. Mechanical harvester and de-stalker. Direct pressing process in a pneumatic press. Juice stored in stainless steel tanks. Racking after 36 hours. Alcoholic fermentation by central control temperature system in stainless steel tanks. No malolactic fermentation. Wines kept on very fine “lies”. Bottling process in January.

Food pairing
Ideal with fish, white meat or for summer quaffing.
