This full-bodied is powerful and perfectly approachable, with good balance and medium long finish. Cassis, dark chocolate, and blackberry aromas are softened by a hint of vanilla oak for richness and complexity. In the mouth, flavors of fresh berries, currants, cloves, and a lingering note of cocoa are evident. This Cabernet matches up well with a wide range of foods from roasted red meats and rich pasta dishes to dark chocolate brownies.
|Vibrant notes of blackberry, dark cherry, plum, and chocolate fill the aromas and flavors of our Chalone Monterey 2012 Cabernet Sauvignon. The notably cool 2011 growing season gave the wine its bright and lively character, while the terroir (soils, sun exposure and climate) of our Paris Valley Ranch contributed to its flavor complexity. Enticing vanilla-spice from oak aging blends with the dark fruit expression, while approachable tannins give the wine its supple structure. This Cabernet Sauvignonís rich flavors stand up to steak, braised short ribs and hearty pasta dishes, but you might like it with grilled chicken thighs rubbed with smoky spices, too.
|Wine maker notes
|Our Cabernet Sauvignon opens with dark fruit aromas, cassis, fragrant oak and a touch of black licorice. On the entry, the full-bodied fruit glides across the palate, layering rich blackberry and red stone fruit stitched with vanilla, oak and spice. The flavors linger through the finish, where they are met by fleshy tannins and good acidity. The rich body and well-balanced flavors of this wine pair nicely with dishes featuring good acidity, such as pasta tossed with roasted tomatoes, capers and olives.
