The NV Brut is always the best expression of the style of a great Champagne House. At AYALA, we take every step to make one of the finest Champagnes. And to show the exceptional quality of our wines, we created “Brut Nature”: Quality expressed in the wine’s most pure style.

Tasting notes
Pale gold in color with a fine mousse, the wine is extremely aromatic on the nose. On the palate, it is quite dry and shows great style and complexity. Pinot Noir gives the wine its richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, mainly from the Marne Valley, gives the wine an appealing fruitiness.

Rating
Non-Vintage: 91 Points - Roger Voss, Wine Enthusiast: "A beautifully balanced non-vintage, in the lighter style that is Ayala's hallmark. It is fresh, but shows a good amount of blend with older wines to give weight and complexity. The green fruit flavors are well balanced with secondary aromas of almonds, green berries and lively, but not dominant acidity."

Non-Vintage: 90 Points - Bruce Sanderson, Wine Spectator: "A beautifully balanced non-vintage, in the lighter style that is Ayala's hallmark. It is fresh, but shows a good amount of blend with older wines to give weight and complexity. The green fruit flavors are well balanced with secondary aromas of almonds, green berries and lively, but not dominant acidity."

92 points + #77 in 2011 Top 100 List: “There's a firm, chalky edge to this minerally Champagne, and mouthwatering flavors of candied lemon peel, green apple, crystallized honey and biscuit. This has an elegant texture and an overall sense of style. Drink now through 2020. 50,000 cases made.” -AN

Wine maker notes
Pale gold in color with a fine mousse, the Brut Majeur is aromatic on the nose. On the palate, it is well balanced and shows great style and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, predominantly from the Marne Valley, gives the wine its appealing fruitiness and roundness.

Food pairing
Ideal as an aperitif, it pairs perfectly with seafood, caviar, scallops, lobster, crab, salmon; sushis and Asian food are also very good pairings. The Brut Nature compliments soft and mouldy cheeses such as Coulommiers, Brie and Brillat-Savarin. Pairings with desserts include crumbles with red berries or figs. Brut Nature can also be enjoyed after dinner with a cigar. And for ladies, it is also the perfect “diet champagne”!
