A.O.C. Muscat de Rivesaltes
Type of vines : 50% Muscatel of Alexandria - 50% Muscatel de petit grains.
Soil : Stony argilo-limestones, the output is of 20hl per hectare. After manual grape harvest, a direct pressing and a separation of musts, fermentation is stopped with sugar 100grs. The wine is high out of tanks for 6 months and then bottled. This Muscatel of Rivesaltes of pure tradition is an aperitif and a wine of dessert.
Tasting : color copper gold, exotic flavors of fruits, citrus fruits and fishing. Very fresh, great softness, perfumes of pinks. Agreements: aperitifs, foie gras, Roquefort, desserts.

David David Schildknecht, Robert Parker's Wine Advocate Points: "The Puig-Parahy 1975 Rancio smells and tastes of purple plum, fig, toasted nuts, and bitter-sweet chocolate, with a more robust and youthful – though correspondingly less ethereal – personality than the 1981. The oxidation here manifests itself more in deep, smoky, toasted characteristics that fold especially beautifully into the chocolaty, nutty richness, and caramelization, as well as in the wine’s combination of silkiness of texture and underlying firmness. And yet, there is a certain snap and brightness – almost like a whip’s lash – in the finish. This could serve as a memorable accompaniment to many a dessert."
