The 2012 Nuits-Saint-Georges 1er Cru Les Cailles, from their 1.18-hectare holding of 77-year-old vines, is blessed with a more perfumed, floral bouquet than Chevillon’s other premier cru 2012s. It comes furnished with raspberry, quince and orange blossom. The palate is poised, tensile, linear and focused, pierced with rapier-like acidity and a mineral-rich finish. This is just shimmering with tension and should drink well over two decades.
