Domaine du Salvard has been a working domaine since 1898. Operated only by the Delaille family, now the fifth generation, brothers Emmanuel and Thierry make quality the essence of the domaine. They practice sustainable farming and Lutte Raisonnée (a step towards organic farming), and limit total production to 21,000 cases annually.

The Delaille's make classic wines from Loire varietals in Cheverny, a region that lives in the wake of its better known neighbors Sancerre and Pouilly-Fume, yet produces consistently good and typical wines. Salvard Cheverny Blanc (85% Sauvignon Blanc, 15% Chardonnay) radiates with elegance and verve. It tastes of lovely, fresh and juicy citrus fruits, like citron and grapefruit, with tang that is balanced by flavors of wild herb and fresh asparagus. It has a clean yet substantial mouthfeel. This delicious wine draws to mind a French garden. It is an effortless cocktail wine and also brings a finishing touch to the table, especially when served with fish, shellfish, or asparagus salad.

Wine maker notes
2014. A pale lemon-yellow in the glass. Delicate, fragrant aromas of citrus fruits, green orchard fruits and hazelnuts.. On the palate, dry yet expansive with a reasonably full body. The flavours are clean and refreshing leading to an aromatic finish. The balance between the zesty Sauvignon and the rounder Chardonnay works very well. Great food wine. drink with crayfish with strips of Dover sole in a saffron sauce, chicken piccata or asparagus mousse.

The appellation of Cheverny extends along the left bank of the Loire from Sologne to the outskirts of Orleans. Its symbol is the castle of Cheverny, built in the style of Louis X111. Domaine Salvard has been in the Delaille family since the 1890's, the latest generation expertly managing their 30 hectares with a programme of conscientious (a.k.a.semi-organic) vineyard management. This particular white is a blend of 85% Sauvignon and 15% Chardonnay. After the grapes are picked they receive a short maceration followed by pressing. After fermentation the wine lies on its fine lees for up to 12 months before bottling. The Cheverny Blanc has been described as a junior Sancerre with intense gooseberry crispness.

Food pairing
Accompanies seafood, shellfish, asparagus, pork, soft cheeses, white meats and even spiced dishes such as curry or Mexican dishes.
