William Fèvre, whose family has lived in the Chablis region for more than 250 years, began making wine in 1959 with 7 hectares of vineyard. Today, the estate is one of the biggest in Chablis with over 51 hectares of vineyards sitting on mineral-rich Kimmeridgian soil, more than half of which are Premier Cru and Grand Cru. The domaine uses older barrels with an average age of 6 years in lieu of new oak to preserve freshness and minerality and to enable the subtle nuances of Chablis’ terroirs to fully express themselves. The wines of William Fèvre show aromatic purity and express the unique characteristics of each vintage. 

The 2012 Chablis “Champs Royaux” has a clean, elegant bouquet of citrus, green apple and delicate floral aromas with beautiful crystal minerality emerging on the palate. Bone dry and refreshing, this is the ideal partner for oysters, shellfish, grilled seafood and summer salads and vegetable dishes.

Bottled three weeks before I tasted it in late June, Fevres 2012 Chablis Champ Royaux based, as usual, on purchased fruit offers a juicy amalgam of honeydew and lime on a glossy palate, leading to a relatively simple but refreshing, invigorating and persistent finish. Plan to enjoy it through 2014.”,,,

Wine maker notes
Champ Royaux Chablis has a very fresh bouquet with notes of citrus and whitefleshed fruit, with a very slightly oaky finish. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation.
