|"when I assembled the white late in the Fall, I loved what I was seeing. The wine (37% semillon, 32% viognier and 31% marsanne) underwent full secondary (malo-lactic) fermentation, and sat on its lees in tank until shortly before I bottled it (unfiltered).
It reminds me of a white from the Provence. It shows an interesting combination of herbs and flowers on the nose, has a roundness in the mouth with hints of stone fruit, minerals and anise, and finishes with lovely acidity. It works so well with food, and yet is drinkable as an aperitif, too. I am so happy with the way it has turned out. I see more semillon in my future..." – from the Winemaker's website
