|100% Syrah. Plot selection: grapes are selected from the best sites of Cave de Tain Saint Joseph vineyard, on terraces, and from old Syrah wines. Second and uncompromising selection in the cellar to determine the final "Esprit de Granit". All grapes are destemmed. After a long maceration (3 weeks), the juice is run off directly into oak barrels for 12 months (30% new French oak).
