The Appellation Hermitage is situated in the Northern Côtes-du-Rhône, left bank. The appellation fans out the town of Tain l’Hermitage and spreads on 130 ha. The vines grow on the south west side of a steep granite hill facing the afternoon sun and protected from northern winds. There is a microclimate with a Mediterranean influence.

Tasting notes
Deep dark colour with purplish tints. Rich nose of red and ripe fruits with vanilla, grilled and spicy notes. The palate is rich and generous with strong but silky tannins. Good length, full-bodied and persistent. Racy and attractive wine. Great ageing potential.

Wine maker notes
The authorized yield is 35hl / ha. A long a classic vatting (20 days). Running off when the wines are warm, directly into French oak barrels. 50% in new oak. Maturing 18 months. The malolactic fermentation takes place in barrel.

Technical notes
Grown between the Sevre and the Maine on the hillsides of Saint-Fiacre, the 32 acres single vineyard of "Domaine de la Tourmaline" is produced in accordance with sustainable agricultural methods. Rooted in two-mica gneiss soils, the vines are around forty years old. Following a cold static settling of 24 hours, the use of carefully selected yeast allows for a slow fermentation (which lasts 3 weeks between 64-68F). Then, the wine ages on lees for 6 months.

Food pairing
Serve at 60°F with red meats grilled or game in sauce, venison.
