Winemaker Tal Pelter began making wine in Israel in 2001 after returning from oenology studies in Australia; by†2005 he founded Pelter, choosing a high-altitude location in the Golan Heights for its basalt soil and the high-quality grapes that the regionís climate and slow, long ripening afford. To this day, Pelter is still a hands-on and small family winery. With a total production of† 7,000 cases of wine each year, it is small enough that the familyís care and high standards influence each of their wines.

Food pairing
I am often asked to recommend a wine that might go with sushi, and this Sauvignon Blanc is perfect for that. Its purity, coolness and soft, fresh texture complements the flavor intensity of raw fish such as hamachi with scallions, fluke in ponzu, or crunchy fresh ika. Or, if you choose to have cooked fish, the Pelter Sauvignon Blanc also pairs delightfully with roasted white flaky fish (red snapper, sea bass) topped with fresh herbs and sea salt.
