For that extra little something you need on the side, of course! I mean, who doesn't love a great little bottle of Champagne? The flavors in this one will knock you off your feet—and then there are the bubbles. It’s truly an enjoyable bottle and it's perfectly sized to work as an aperitif for two.

Ployez-Jacquemart was created in 1930 by Marcel Ployez and his wife Yvonne Jacquemart. Now in its third generation, this small, family-run house is dedicated to preserving the special methods necessary to create extraordinary Champagne (total yearly production is only 6,000 cases). A classic Champagne blend of roughly equal parts Pinot Noir and Chardonnay, this release is mostly 2007 base wine with 40 percent reserve wine from 2005 and 2006. Disgorged in December 2011, it was aged for three years before release.

Food pairing
I love starting off a great meal or event with bubbles. Mostly we drank this lively Champagne by itself—the hazelnut notes blended well with the summer air—but we also had some crunchy cucumbers with salty capers, all the better to appreciate the wine's minerality and pear flavors.
