Made from certified organically grown grapes and bottled without the use of any sulfur.
2007 was the Testa Family's 95th Harvest. The 2005 Testa Cabernet is made from very small berries and exhibits silky tannins from extended skin contact giving the wine remarkable flavor. The grapes are fermented in open top containers and the cap is hand punched. The must is then basket pressed; a slow, but highly worthwhile process. The wines are subsequently aged in French oak and bottled and corked by hand.
A darkly colored wine with depth and density that is both brooding and appealing. Tony Coturri feels this wine has excellent cellaring potential and can be consumed now through 2020.
