Made with traditional Bordeaux grape varieties: Sauvignon Blanc (40%), Sémillon (40%), and Muscadelle (20%). This particular blend, which goes back centuries, has become rather rare in recent years. Winemaking is traditional: skin contact (50%) and cold fermentation (16/18°C). The wine is aged on the lees for about 3 weeks, which accounts for its round, smooth, and remarkably fruity flavour.

Year after year, Lamothe de Haux, a minor château, produces enticing Bordeaux blanc blends. The succulent 2007 shows why they have become a cult white in New York.
Mainly sauvignon blanc, the ’07 is perfectly balanced by sémillon and muscadelle. Drink it lightly chilled, with a Cobb salad and, as the Bordelais do, with langoustines and smoked salmon. |
