This is a grape known for its scarce production, being the least productive of the white Galician varieties. The Caino is a long cycle, late ripening grape. It is the last to be harvested in the season, when there is a high risk of precipitation. It is a very delicate grape, its sensitivity to mildew requiring interventions such as defoliation or green pruning to prevent diseases and attain a good, balanced ripening. A significant viticultural virtue of the Caino is its ease to exhaustively extract the particular traits of the terroir where it grows.

The 2010 La Mar is a blend of 85% Caino Blanco, 10% Albarino and 5% Loureiro harvested on the 2nd and 3rd October and saw three months lees aging with regular batonnage. It has a distinctive, appealing bouquet with ripe clementine, beeswax and honey that is well-defined and seductive. The palate is well-balanced with crisp acidity on the entry, layers of tangerine and mango nose with a pleasing glycerin tinge on the finish. This is an intriguing wine packed full of flavor. Food pairing
It high acidity makes it a perfect pairing for fish and seafood, but its powerful body and volume enlarges its pairing range to stews or roasted meats, and special or slightly spicy hot dishes.
