Today, I focus on a wine that I absolutely love and that lately has been a particular source of excitement for me: B.R. Cohn’s 2011 Cabernet Sauvignon from their Trestle Glen Estate Vineyard in California's Sonoma Valley. Not only is this a big, rich and intense California Cabernet, a style to which I am drawn again and again, it's also a rare occurrence of a Kosher wine from an esteemed, reputable California property.

Passover and spring go hand in hand. In Jewish tradition one of the names given to Passover is Chag Ha’Aviv, the spring festival. In fact, the concept of “spring cleaning” originates from the Jewish custom of clearing one's house of chametz, leavened bread, and anything else that isn’t Kosher for Passover. Given that we are now in the first days of spring, all of us here at 67 Wine are looking forward to offering the most diverse selection of Kosher wines possible for the Passover holiday and beyond.

Food pairing
For a wine that is relatively young, the nose is more than generous. There is ample dark fruit literally popping out of the glass, with whiffs of warm spice and cedar that keep me coming back just to take in the aromas themselves. But as pretty as the nose is, the wine really shines once tasted. The texture is fleshy and supple, with flavors of blackberry, plum and cocoa coming to the fore, followed by a lingering trail of nutmeg and tobacco on the long finish. And although it is opulent and assertive, there is a sense of togetherness and proportion here. It is more than able to be enjoyed on its own, but this wine will be even more pleasurable with a rich, gamey dish like duck with cherry sauce or Mediterranean-style rack of lamb. In the end, the B.R. Cohn Trestle Glen Cabernet will be as much a source of comfort as of springtime excitement and inspiration.
