Harvested at -10 C; pressed between 9 and 18 hours; 100% stainless steel. Eiswein by definition must be wine that is frozen while still on the vine. The sugars and the other dissolved solids do not freeze but the water does allowing a more concentrated grape must to be pressed from the frozen grapes. This results in a more sweet and concentrated wine. Unlike the grapes used for other dessert wines such as Sauternes or Tokaji, ice wine grapes should not be affected with Botrytis Cinerea (or Noble Rot). Only healthy grapes should be used. Sweet and unctious. This is a great bottle of dessert wine
