| The wines are kept in the cellars for a minimum of 8 years, gaining in complexity and finesse. Salon was the first Blanc de Blancs Champagne. Salon uses only the cuvée or first pressing from hand-selected grapes to assure the highest acidity, aroma, finesse, ripeness and quality. Salon never puts its wine through malolactic fermentation, thus retaining the crispness, acid backbone and profound depth of flavor that are the hallmarks of Salon. This means, however, that eight to ten years of cellaring are required to harmonize the fruit and acid. Salon ages remarkably for 15-20 years or longer, developing increased complexity.
Salon is kept on its yeasts in deep limestone cellars in Le Mesnil-sur-Oger until a specific order is received. Salon is then disgorged by hand for each order, with the cellar master inspecting the bouquet of each bottle. |
