Frank and Simone Mitolo founded the company in 1999, drawing inspiration from Frank’s Italian heritage and horticultural
background and, especially, their children Gemma, Alexander and Marco (hence their G.A.M. wine). In 2001 winemaker Ben
Glaetzer became a partner in the business, and since then Mitolo has gone from strength to strength. The grapes for Mitolo
come from both the Willunga district of McLaren Vale and Greenock in Barossa Valley. The Willunga district vineyards are
situated in the most southern tip of the McLaren Vale. The vineyard soil types are heavy grey loam over sandstone soils, with
black cracking Biscay clays intermixed. The Greencock vineyards sit in the heart of the Barossa Valley. The light sandy soil
has poor water holding capacity and is supplemented with drip irrigation.

Robert Parker 91 points (Feb 2009) The 2007 Serpico Cabernet Sauvignon offers up toast, chocolate covered cherries, and mineral notes. Structured and a bit compact, it will round out with a few more years of bottle age but without the generosity normally associated with this cuvee. |

| The grapes were left on drying racks for 7 weeks and 3 days in the traditional Amarone manner resulting in 30% bunch weight
loss. The wine was fermented on skins for 2 weeks and then left to macerate for a further 3 weeks prior to pressing. |
