The heavy maritime influence cools the afternoon heat with consistent winds, moderating temperature and allowing for clean fruit flavors and great acid retention. Built on the levy system, soils are fertile but well drained tending to produce balanced vines; canopies with great exposure for subtle nuanced flavors.
Long, cool fermentation in 100% stainless steel tanks, capture the expressive, clean fruit flavors characteristic of vineyards in this area. Harvested at lower brix, the natural acid levels compliment the crisp apple and pears flavors of our Three Pears. The lengthy fermentation produces wines with great balance, clean mid-palates, rounded out by a slight sweetness.
