Awaken Your Thirst for Red Wine: September Edition

September has arrived, and Summer is gradually makings its slow exit. So, what happens to our drinking habits when the sluggishness of late summer days meets the hectic pace of back to work. How do we deal with the fluctuation of temperatures, while our palates start craving something more than a crisp Rose, or a mineral driven Chablis. Below are a few of my suggestions to help you adapt your drinking habits to what's to come, Autumn.

I had the pleasure to meet the larger-than-life, Mr. Manuel Moraga, last year and his wines and vineyard-to-bottle philosophy blew me away. Made with PAIS, a varietal that is hardly known outside of Chile, but lately has received great recognition. Drink this wine with a slight chill, and pair with Smoked Trout with horseradish relish.

I am big fan of Mr. Gregory Perez, his wines are seamless, with a heighten level of purity and terroir-driven personality. Brezo is 100% Mencia from the DO of Bierzo; Medium-bodied, cherry cola, slightly herbal with just the right acidity and liveliness.
Roasted Salmon en papillote with slivers of ginger, carrots and leeks. Et, Voila!

One of my favorite family-owned wineries from Piedmonte. This Barbera is succulent and exciting with nuances of Black cherry and alpine herbs. Grilled Pork chop on the bone baste with melted butter and thyme and garlic.
