At this intimate dinner, you will meet and talk with TJ Evans, winemaker for Domaine Carneros Winery in Napa Valley, California and taste a collection of Domaine Carneros’ finest sparkling and still wines. As a special treat, TJ Evans will also pour two exclusive wines that can only be found at the winery. Please join us on this exciting occasion, where both conversation and wine knowledge will flow freely.

The Wines

Domaine Carneros and Aaron Chambers, executive chef of Boulud Sud, have teamed up to prepare a delicious four-course meal. Each plate has been carefully crafted to highlight the wines of Domaine Carneros.


2008 Domaine Carneros Vintage Brut

57% Pinot Noir, 43% Chardonnay
The Vintage Brut Cuvée is the signature wine of Domaine Carneros, where only the best Pinot Noir and Chardonnay from Carneros are used. This sparkling wine has been aged for three years in bottle and will continue develop depth and complexity as it ages. This Cuvée has aromas of white flowers, apples and citrus peal mixed with notes of toast and vanilla. It is elegantly structured with a signature long, creamy finish.

Domaine Carneros Brut Rosé, Cuvée de la Pompadour

58% Pinot Noir, 42% Chardonnay
Domaine Carneros Brut Rosé is a perfectly balanced wine that emphasizes fruit and floral characteristics. It is created in the Champenoise method with grapes sourced exclusively from Carneros. The Brut Rosé has notes of wild strawberries and roses with hints of peach and jasmine. It is round and balanced, with bold fruit and floral characteristics.

2010 Domaine Carneros Dijon 777 Pinot Noir
100% Pinot Noir
The nose of this Pinot Noir is generous and dynamic with distinct red berry fruits of raspberry, cherry and boysenberry. On the palate, the fruit continues with fresh acidity and minerality. There is a subtle hint of earth in the background, adding to complexity while allowing the fruit to shine.

2010 Domaine Carneros Estate Pinot Noir

100% Pinot Noir
This luscious red is full of raspberry and black cherry aromas and flavors. The fruit is enhanced with hints of smoke and exotic spice. The bright acidity and mild tannins continue throughout the palate and create a long, full finish.

2006 Domaine Carneros Le Rêve Blanc de Blancs

100% Chardonnay
This Blanc de Blancs was crafted with the intention to be a long-lived classic. It has generous aromas of buttery brioche, white flowers, stone fruit, honeysuckle, pear and fig. The wine’s rich palate of crème brûlée and toasted almond lingers on the long, silky finish.


Domaine Carneros


Founded in 1987 by Champagne leader Claude Taittinger of Champagne Taittinger, Domaine Carneros produces premium Carneros sparkling wine and limited production Pinot Noir. Twenty-five years after the winery’s inaugural harvest, Domaine Carneros has become a benchmark for California sparkling wine reflecting both their Carneros terroir and the craftsmanship of their French legacy.

TJ Evans, Pinot Noir Winemaker at Domaine Carneros

TJ Evans joined Domaine Carneros as their Pinot Noir winemaker in 2008. Prior, his winemaking career began in college where he interned at Robert Mondavi Winery and Far Niente Winery. A life-changing trip to the northern Rhône Valley and an apprenticeship on Pinot Noir cemented his future in winemaking. At La Crema Winery in the Russian River Valley, his passion for Pinot Noir grew into an obsession. His winemaking skills continued to grow at Alderbrooke Winery in Dry Creek Valley and at Vinedos y Bodegas Corpora in the Bío Bío Valley in Chile. When Evans came to Domaine Carneros with 10 years of experience, he was ready for something new and exciting. Evans knew that he could expand upon his knowledge of still wines while also exploring the use of Pinot Noir in a way that was new to him – in the production of sparkling wine.
